Jackfruit is a tropical Asian fruit that when picked while unripe or 'green' can be used as a meat substitute. The texture is similar to pork, or chicken and it does not have a strong flavour, lending to it to a wide range of dishes. Inspired by traditional French cuisine, this young green jackfruit 'confit' is delicious and tender, it is marinated in oil with french herbs; rosemary, garlic, bay leaves and sea salt.
